I was trying out a Buckwheat muffin recipe and decided to only put it in 6 muffin tins so i could make pancakes with the rest.....that was a very good idea i had because the muffins were awful!

2 cups buckwheat flour
1 Tablespoon cinnamon
1 teaspoon salt
3 cups water
That was the muffin recipe....don't bother.
So suppose half of that was left
1 Cup Buckwheat
1/2 Tablespoon Cinnamon
1/2 teason salt
1 1/2 cups water
then i added:
2 Tablespoons melted coconut oil
2 Tablespoons Baking powder
1 teaspoon Vanilla
Mix it all up. Heat on a little below Medium. 1/4 cup to dish
out the batter. Chocolate chips and banana would be good on them...
then of course while they are still warm add some Earth Balance
Butter. And my favorite: Agave Nectar!
These were so yummy AND Wheat free so you can have a big 'ole
pancake breakfast with your gluten-free friends...like Jess!
In my search for the perfect vegan pancakes I've decided to try different flours. Earlier this week I was obsessed with spelt flour. It's extremely fluffy and light and i thought it would be good for a pancake because often when i make vegan pancakes they are very flat and thin.
Turn heat on to a little below Medium...
Mix all dry ingredients. Add in Milk, agave and coconut oil. You can use a mixer or food processor to make sure it's smooth but stirring by hand worked fine for me. Take a 1/4 cup measuring cup and pour batter onto pan. Then add fruit, or chocolate chips to the uncooked side. Wait for it to bubble. Flip. Wait for other side to cook...I always have to check by sticking a fork in it to make sure it's not gooey on the inside.
they turned out to be the best vegan pancake I've made so far......
